Louie,
Go to the window menu in mail and arrow down to previous recipiants and delete her old address from the list. And make sure that her old address is not in your address book.

If there is more e-mail address's with the same first letter then I arrow to find the e- mail address I want. My question is how do I remove a e-mail address from this list? The reason I ask is a friend has changed her e-mail address and now I have two entries for her on the list of e-mail address's.
