Well it is even easier to do this in Leopard.

I have mine to automatically save my attachments as long as they are not edited. This was a feature in Tiger I wanted since it was harder to either open from within the message or save them. They both took the same amount of time. Now I just press command Y and command W and it saves to a folder I created. This takes the guess work out of saving files.
