If you mean your default web browser, simply open prefs in either Safari or Webkit, go to general, and choose webkit.app as your default. If you actually mean the system-wide HTML rendering engine, you need to replace the one installed with your OS with the one from the Webkit binary. I'd advise against this however, as the results can be unpredictable. Bare in mind that the Webkit svn builds are in a state of constant change and that certain applications in OS X may not cooperate well with some of the changes. You're not guaranteed to have problems, but odd things can happen and the last thing you want is to update your system-wide Webkit with a buggy build. At a minimum if you really do wish to do this, make a backup of your current webkit so that you can easily replace it if something does go wrong.
