OK, I got this situated but now how do I add applications. I only have Growl, Growl Mail, and Growl Menu as application choices. In the older version I had just about every app that was in my applications folder to choose from.

In that tab there is a "display Styles" table with an item called "Speech" selecting this will let you set the voice and other parameters for the notification as well as setting this to be the default notification style. YOu can also do this on an application by application basis as well int he Applications tab.
