Garageband is more accessible than it was and I understand that some folks are using it. I haven't had time to try it my self, but it is worth a look.

Hijack audio pro is completely accessible.  You'll have very little
trouble using it for your recording needs.  Editing may be a bit more
difficult, but actual recording, and capturing is a snap with hijack
audio pro. I use it all the time for stuff, and have not had a problem. 
If you get the pro version of quicktime, you can do simple editing
with that, though I haven't installed my registration code on leopard

I plan to install my leopard copy today (was outside when fedex
