Yup, using VO J to jump back and forth from message table to message text, as outlined in the VoiceOver getting started guide.
So if the getting started guide doesn't have the ideal way to use Mail, where can a guy turn for a how to?

But I think your interacting with the table because of the method your using to navigate to the table. If my guess is correct, your either tabbing or pressing VO J, right?

Is there a way to have Voiceover's voice change change when you're interacting with something?
