hello  Larry,
to start, it's quite simple:
go to the menubar in mail and chose the tirde minu-item, starting from the left : archive. 

There you have to go down to the 15th item , starting from the top.
There you will find something like import postbus (postfolder or imbox: my mac is in dutch) 

Then you activate this and chose the conversion you want.

Can anyone point me in the right direction to convert email from my Windows Outlook account to some form which I can import in to the Mac?

I need to speed up my transition from Windows to the Mac.
