prova ad aggiungere il file seguente al file /etc/grub.d/00_header:

#to the end of file /etc/grub.d/00_header
cat << EOF
set 
superusers="root"
password root xxxxxx
EOF

naturalmente come password non mettere xxxxx

....

dovrebbe chiederti la combinazione root/password per ogni modifica...
