At Mono Lake, get up before sunrise and make your way to South Tufa.
The signed left turnoff is from US 395 (small brown sign), about 3
miles south of Lee Vining and the junction with California 120 (Tioga
Pass Road):

It's worth a try, but I have no idea what accomodation is like in Lee
Vining - we're driving up from Vegas for the weekend so I figured that
we'll probably make it to Bishop if we leave after Ann finishes work.
If you have time, drive 120 west into Yosemite National Park at least
as far as Tuolomne Meadows. The sunsets there are spectacular this
time of year:

I'd love to go on 120 - been trying to drive along there for a while but
as I'm usually in California in March, it was always closed when I was
there. Let's see if we'll have the time.
The trail to Mono Pass is worth a day too (8 miles round trip at
10,000 feet, relatively flat). The trailhead is about 1.5 miles after
the park entrance station, on your right. At the pass, you might see
this guy:

At Bryce Canyon ("A hell of a place to lose a cow"), walk down the
Fairyland Loop:

Spoiled by the relative proximity of Yosemite, I prefer Bryce's red
rock sculpture to Zion's rugged granite. But if you get to Zion, walk
up the Zion Narrows along the Virgin River.
Well, Zion and Bryce are quite close to Vegas and with Ann living and
working in Vegas, it's an easy weekend trip...
