Oh yeah, as James mentioned, you need to set the backup mail host as a lower level mx record in DNS. The lower the priority, the higher the number, so given the following: mx1.mydomain.org IN MX 10 mx2.mydomain.org IN MX 20 mx3.mydomain.org IN MX 30 the first mail host to be tried will be the one with MX l0, if that fails, it falls through to the 20, then the 30.
