do you mean that you wish to know more about  jaws scripting? or you just 
wanted to know how a set of jaws script work with jaws?

I know that jaws script is used to improve the accessibility of a certain 
application for jaws users.So if I have a script for, say, 
winamp, what do I do with it? Save it to the jaws folder?

what version of jaws that you are using? if you using jaws later then version 
6.0, you should save all the script files in to

start/programs/jaws X.X/explore jaws/explore my settings

note: jaws x.x is your jaws version.

How do i know its functions for the application?

what do you mean?

And, is there a need to learn new keystrokes or hot keys?

yes, each application will have its own special set of keystroke and shortcut 
keys.
