Try this:
If outlook 2007 is anything like Outlook Express,
under View there should be an option to show unread messages and one to show 
all messages.
Choose the show all messages, otherwise the already read messages will not be 
shown.

  I went through my options for handling email.

  Auto save in Inbox is checked, but my read messages still disappear from the 
Inbox after exiting Outlook.

   

  I created one new folder.  My read messages are not in the new folder or 
anywhere else.
