Changing font and font size

Hi all.
Does anyone know an easy way to change the font size to say 11, and the Font
itself to Arial?
I need to do this for quite a long document which I will be adding to
regularly. I am wondering also once I have changed it, how I might check it
is still the same at the end or throughout the document?
I'm using Jaws with Vista home.
Be grateful for any help.j
