Here is a link to a page with tables of Excel key tips. The first column of the table is the command, the second is the key tip. Find the command you want, then press insert-control-t to set up the tables. JAWS will tell you the name of the table you're in. That will be the first key of the command, then use the tips from the table.
So if you're sorting, find "sort a to z' in column 1; column 2 tells you that the command is 'ss'. Insert-control-t to set up the tables. 

JAWS says 'home tab'.  So the key tip would be h s s.
