While not on the latest version of finereader, you can get a free and 
detailed guide to Finereader from

and, no, commands and procedure on how to scan a document into 
Finereader does not depend on the scanner being used. there might be 
some differences between different versions of Finereader but all of 
them are keyboard accessible and work well with jaws. Finereader is a 
very good and cheaper alternative to the more expensive specialized 
ocr packages for the blind.
