Janet,

You can save the email to a document folder and then edit it down, to do this, 
in Outlook Express, highlight the email, press alt +f for file menu, then A for 
save as, tab to the box and choose the format you wish to save it in, then tab 
past the save button and choose in the combo box where you wish to save it, 
then navigate back to the save button and press enter or space on it, and your 
email is saved.
