The only thing that I think is a universally good idea to do is to remove
the speech recognition components from the office installation.  They can
sometimes come up and bite you, and if you don't need the speech input then
it saves a little disk space.
Outlook, if you intend to use it may benefit from some tinkering with the
display so that you don't have the reading pane turned on and the message
listview is in a format that you can handle.  Otherwise I would take it
pretty much as is and see what you come up against which is better than a
long checklist of possibly needless adjustments.
