Help with disabling Socket Pooling

SBS2000 using Exchange and ISA 

OK so I broke down and got my self the ISA Server and Beyond (great book by
the way).  I started to go through the steps of disabling socket pooling for
SMTP and IMAP.

So I went to disable socket pooling for SMTP and to set up exchange to use
the internal NIC and not the External.  Right now Exchange is using the
External Nic to send an recieve mail.  When I switch it to the internal NIC,
I can recieve, but not send.

There were a few steps that required to go into the propteries of the
Default SMTP  Virtual Server in IIS.  I dont seem to have that in IIS.  I do
in Exchange.  I cannot continue with the other steps unless I can get into
the propteries of the Defaul SMTP Virtual Server in IIS.  The steps that I
am trying to complete deal with not allowing your exchange to be a realy
server.  Plus I also think I need it to assign Exchange to the internal NIC.

I tried to go into Control Panel | Add/Remove Programs | Add/Remove Windows
components | IIS | to add the SMTP Virtual Server in IIS, but its says its
already added.

Others have told me that not being able to see the Defaul SMTP Virtual
Server in the MMC after installing Exchange is normal.  If its normal, then
how can I access it?  How can I complete the steps to not allow my Exchange
to become a realy server, to allow Exchagne to use the Internal NIC and to
disable Socket Pooling for SMTP and IMAP to use remotely?

I have been pulling out my hair too long with this (almost bald now).  

Sorry if this dosent make any sense, I have tried to do this so many
different ways that in a little confused as to what is going on...
