ISA 2004 can help, since you can filter on traffic patterns.
Many of these apps are "tunneling" through HTTP, so you can make use of the 
HTTP filter to bock them.

So long as your users are able (and savvy enough) to rename the applications, 
then the FW client app filters aren't going to be very effective.
