OK, my ignorance will be showing. I tried just switching over to the other gateway (ISA 2k #2) but all outgoing mail stopped (so much for this being simple). Very high-level, setup your external (public) MX record(s) to point to the external interface of the firewall you want to use for incoming mail and then configure your Exchange server to forward to the internal interface of the firewall you want to send outgoing mail through.
