Its the same thing. Just edit menu.lst (I think) and remove the
entry for whatever kernel image you don't want appearing as an option.
Infact, IIRC, grub didn't even need you to run the equivalent of "/sbin/lilo
-v" everytime you edit the file. It reads it while booting time, and allows
you to dynamically edit the config file at boot time.
Disclaimer: This is from pre-1.0 grub days. Things have probably
changed now.
