I think  its pretty complicated to  let someone instal it  and yet not
run it  by default to do  it without breaking the  debian-way of doing
things.   For  example,  exim  does  not run  in  standalone  mode  in

Redhat and Debian both use the "alternatives" package to work around 
this.  There is a set of symlinks in /etc/alternatives/ which gets 
symlinked to the appropriate mta / other software that you set.  So you 
can install several conflicting packages like this.
