You could start with IPC standards if you can access a copy. They are a good 
place to start, typically take the middle road on the dimensions they give.  
Also you could check with the manufacture of your boards and see if they have a 
suggestion.

Hello,
I have just a technical question about designing the footprints of symbols, 
like capacitors CMS for example.
In datasheets, there are dimensions of package (805,605,etc.) but I think I 
have to make the padstack a little larger than indicated because it's just 
dimensions for component, not for its footprint.
Has someone typical dimensions for padstack associated with 603 and 805 
packages ?
