I have to agree with Eric here.  I've used qmail several times before, and 
it's very easy to setup if you follow "Life with qmail" by Dave Sill.  And, 
as Eric mentioned, it's very secure (one of the most important factors to 
me).  

SpamAssassin works pretty good too from my experience with it.  Probably the 
only down side is that it may be too much over head for a really high volume 
mail server since it's Perl based (vs. a compiled language).  However, I 
haven't ran into a problem with any of the mail servers I've configured it 
on.  One of my friends was using it at an ISP and it handles 25,000+ e-mails 
per day on a single CPU box (can't remember the exact speed though).

Courier-Imap is a pretty good choice if you want IMAP access.  I would 
personally avoid any of the IMAP servers that have "WU" or "UW" in their 
name.  If you only need pop3 access, stick with the pop3 sever that comes 
with qmail as it works very well.

For AV software, there are a few options that work with qmail.  Qmail-scanner 
supports a wide variety of AV software including f-prot and clam.  It also 
makes it easy to integrate SpamAssassin with qmail.

For web based interfaces, I think both squirrel mail and IMP are nice and have 
a lot of features.  Neither were too difficult to setup IIRC.  It's been 
awhile since I've used either one though, so I can't really give a 
recommendation of one over the other.
