Most lock you into their product.  But then that's only for one video 
production, you can do the next one in whatever tool you need.

I use Personal Studio on BeOS (surprised at how cheap it was - $90 at the time) 
and Quicktime Pro on Windows.  Plus ffmpeg and other tools to fiddle with the 
audio and video.

Personal Studio is good for grabbing live video in BeOS (better results than in 
Windows on a PIII/550 with a Haupage video board) and titling.  Quicktime is 
mostly for recompression, with crude editing (you can sort of cut and paste 
clips to make a complete video).
