Three things here strikes me:
* Window/Preferences/Date and Time/Clock = 24 Hour
* Window/Preferences/Date and Time/Date Order = Year-Month-Day
Are there any reasons for why these settings are not default? If I'm not
totally mistaken, that time/date format is used in most countries and
follows ISO 8601.

Because not everyone likes this and for most people it's crap, I guess.
Although I find the default's (american, I would guess) month-day-year
even worse.

Yes, date/time defaults are another thing localised builds would have set correctly. However if the other Japanese bugs could be fixed in the tree I would assume it would be acceptable for them to stick with the default prefs - this isn't by itself a compelling reason to create a new distro, but just the sort of change that may as well be made if you are already customising the build. I can't think of anyone who would say "it's cool and all, and I'd definitely help them out with development - but I had to change the time/date setting".

* Window/Preferences/Volumes Icons/Show Space Bars ON Volumes = validity
Is there anyone who doesn't use that feature?

No idea.

Or the better question - anyone who realises it's an option and actively prefers it switched off? Definitely should be on by default IMHO.
