 I know how to do the demo, but I have close to zero video creation/editing
 skills and capabilities.

 I could put my video camera on a tripod and do the demo in front of it, so
 that people know what it is about. Someone can then take that and edit it,
 or recreate it from scratch by using some of the cool video authoring
 software that is available to create videocasts. If this is something that
 would help, I could do it; but I would need some time.
