Join the Italian i18n mailinglist at 
http://www.freelists.org/list/haiku-i18n-it. 
Andrea Bernardi should welcome you there. Together you can work on a 
translation styleguide, and decide who's lnguage manager for the 
Italian translation. When that's cleared up, you'll get an account at 
http://userguide.haikuzone.net and you can start cracking.
