Great, I too would like to figure that out too!
I was using an Arduino on one end, an Android phone on the other.
Had set up the Arduino to pass serial through from the host computer, but was't 
able to change anything on the MDFLy BT module.
Fortunately it passed traffic through just fine, so I lived with the defaults.
