Delia Smith's Old-Fashioned Cherry Cake Ingredients: 200 G butter at room temperature 200 G caster sugar 4 large eggs, lightly beaten 200 G plain flour half teaspoon baking powder 225 G glace cherries, quartered 100 G ground almonds a few drops of almond essence 2 level tablespoons of demerara sugar 1 tablespoon of milk METHOD: 1. Line the base and sides of a 20 cm/8 inch round cake tin (10 cm/4 inches deep) with greaseproof paper or baking parchment, then grease the paper. 2. Preheat the oven to gas mark 4, 350 degrees Fahrenheit, 180 degrees Celsius. 3. Cream the butter and sugar together until light, pale and fluffy. 4. Gradually beat in the whisked egg a little at a time. 5. Sift the flour and baking powder together, and carefully fold this into the creamed mixture using a metal spoon. 6. Toss the quartered cherries in together with the ground almonds, and carefully fold these into the cake mix, adding one or two drops of almond essence and then add the milk. 7. Spoon the cake mix into the prepared cake tin, level off the top with the back of a spoon, then sprinkle with the demerara sugar. 8. Bake the cake in the centre of the oven for 1 hour, cover with foil and continue to cook for a further 30 minutes, or until the cake has shrunk away from the sides of the tin and the centre is springy to touch. 9. Cool the cake in the tin for 15 minutes before turning out on to a wire rack to cool. Store in a tin.
