Two reasons, both of which can be ignored if we want.
1) MIDI Channels are well understood, and we've really overloaded the
semantics a lot. You can emulate MIDI channels with these things, but you
can do much more.
2) The word channel also has a very well-known meaning regarding audio
data streams. It's very hard to speak of 5.1 without using the word
'channel'.
I originally proposed "module" or "page", but neither seems to fit
perfectly. "Module" is close, but it's a very general term.
Maybe prefixing it with GMPI makes it good enough? A "GMPI Plugin" has
one-or-more "GMPI Modules" ?
