To set the hostname in RedHat
edit the file /etc/sysconfig/network
make or change the entry
HOSTNAME=<your hostname>

In a debian system, you will find a file /etc/hostname
you can put in your hostname over there.

And don't reboot your system, just change your hostname using the hostname 
command. The next time you reboot the init scripts will read you hostname from 
those files.

For application to be able to resolve your hostname you will have make an entry 
in /etc/hosts.
