If you can find a copy (they're still available in bargain packaging), 
check out Looking Glass Studios' classic, genre-defining Thief: The Dark 
Project and Thief 2: The Metal Age.

They run really well on even moderate hardware (I originally played 
Thief on a P2 350MHz with a Voodoo 3 card).  Graphics will seem blocky 
and out-dated compared to, say, Unreal Tournament, but that's not why 
you're playing... these games invented the first-person sneaker, and I 
often refer to them as pure RPGs.  They're very immersive, and really 
draw you into playing Garrett, the master thief.  The story and world 
are both quite interesting, too.

Thief: The Circle (http://www.thief-thecircle.com/) is a great source of 
information for common problems (such as getting the original game to 
install under Win2k or XP).

Um, other than those, my favourite games have been Ultima IV, Ultima V, 
Baldur's Gate, Baldur's Gate II, Grim Fandango, the Monkey Island 
series, and various random shooters and whatnot (like Raiden, or the 
extremely bizarre Twinkle Star Sprites).
