Because people are either clueless or lazy. Or worse.

There are instructions to unsubscribe in the footer of *every* list 
message -- so they have to be either too dense or too lazy to scroll 
down to see them and to click on the link. It's much easier to 
broadcast to the entire list their cluelessness, I guess.
