postmaster address

hello, I may have asked this question before, but I never got it resolved
and it pops back up every once in a while.

The situation is: A long time ago... we had a server called EXCHANGE1 and
everyone was on it. A year ago, we built a new server EXCHANGE2 and moved
everyone to it, and decomissioned EXCHANGE1.

However, NDR reports and such still say they are coming from
postmaster@xxxxxxxxxxxxxxxxxxxx , how can I change this? Where is it done? I
thought I read somewhere it was the "exchange administrator" account, but we
have no such account.
