Move the mailboxes.
Replicate all the public folders to the new server.
Change Offline address list server if you setup.
Change the Recipient update service server if you setup.
Recreate the SMTP connector from the new server.
And if you have it tconfigured to the internet please do the neccessary IP
address changes on router and firewall.

Before you begin anything Godfrey, I would like to know if the present
server running Exchange 2000 Server is a domain controller or not. If
it is a domain controller and a global catalogue server, the procedure
of what you have to do is different if it just a member server.
