hiding server info in header

One of the companies I'm working with recently had a security assesment
performed on their Exchange 5.5 server. One of the vulnerabilities the
software reported was regarding the server info revealed in the header.
(They sent a bogus email and received this info in the non-delivery
receipt.) Is there a way to control what is reported in he header?
Where/how??
