I would have one question in exchange server 2003 ent.

 

for example if any user send an email from outlook it should leave a
copy (send item) in exchange server also. 

is it possible. I never try this before. Please if any one known's about
this let me know the steps.

There is an option to keep a copy in a common mailbox. It is in the
properties of the user object in AD.
 

If using Ex 2007, then, there is archiving and journaling OOB.
