Without checking, I don't think it's a supported install. For stability, I think that Win2003sp2 + E2K7 + sp1 beta is VERY stable. I could say lots of things about software development cycles, but the important thing you should try to realize is that the b3 fork for longhorn happened at an inauspicious time insofar as Exchange 2007 is concerned. It's public knowledge that the "beta" of sp1 is "probably not" feature complete insofar as the final sp1 is concerned. One could perhaps surmise that it was released when it was released in order to correct some of the glaring deficiencies that prevent Exchange 2007 at RTM from having feature parity in some specific areas with Exchange 2003 sp2. Microsoft might even suspect that, given how relatively few charges there were (in comparison to a normal full service pack) that a number of companies would be willing to install that beta into production in order to attain that feature parity - should those features be important to them.
