We used to have similar issues with Nortel's Symposium Call Center
software... Is there anything else on the server?

I only have 60-70 users at any given time and I have 1 gig of memory on
the server.  It will also go all day at about 35-45 mbs of memory on the
store.exe after a restart of the service.  Then it will shoot up to 700
mbs (the most I have seen it go to) sparatically.
