I think you'll need to manually enter the Ip address of the DNS server on your 
VPN connection, otherwise you're effectively using the ISP DNS server and 
Outlook/Exchange are not resolved correctly. After you've established the VPN 
can you ping the Exchange server both the name and IP address ?
