Stop emails for Ex-employees at Exchange Server

Is there anyway that the emails for Ex-employees can be stopped or
filtered at the Exchange Server (2000).  One of the ex-employees has a
lot of junk emails, and they are currently delivered to the
administrator as undeliverables.  As there are also legitimate
undeliverables that need to be redirected, I cannot just delete all the
undeliverables.  Therefore, a great amount of time is spent on going
through every one of the undeliverables to delete the ones for the
ex-employee and to redirect the legitimate ones.  Thanks in advance.
