Yes isn't that great! Never never land ... I feel like Peter Pan ! 
I had done the same thing forwarding the messages for a while and then
when I stopped that, disabled and removed the account I was getting
NDR's ( I have them sent to me because many times it's mail I can resend
to the correct person) .. the NDR's for the old employee were a pain and
I found this solution .. I forget where.. it could have been here on
this list :-)

I had the same issue. What I had to do was create a new distribution
group I called "EX Employees" Then you need to email enable the group
... the main email address is the ist ex employee I had. Then everytime
you have someone leave and you remove their account add their old email
address to the email address tab. Also hide the group.
