I've just spent the last couple hours entering all of the domains received
in the past month for two ex-employees. WHEW!!! Hopefully this will lessen
the number of emails going to the administrator account. I'll keep you
posted...no pun intended!!!

Very easy:

You must have exchagne 5.5 sp2 to do this: 

Open the "Exchange Admin" program, click on "Connections", go to "Internet
Mail Server" and then click on the "Connections" tab. If you have server
pack 2 installed you will see a "Message filtering" button, click the
button and finally click on "new". Insert the particular email address and
you are done. For the change to take effect you must stop/start the IMS in
"Services" (Found in Control Panel).
