Single Outgoing Internet SMTP Server

I have a question that I can find answers all around but not directly on
point.  If you have a single server that's your dedicated outgoing
Internet mail server, how do servers in other routing groups throughout
the enterprise know to forward outgoing messages to it?  Does the
Connection Scope setting in the Internet Connector do the job,r do you
need to put a smart host on the other SMTP connectors, or is it
something else?  I'm hoping someone who definiitively knows the answer
will chime in.
