We installed Exchange on one of our DC's as we only have two.

Is the need to manually change exchange AD objects limited to when it is

When you say that I will need to unjoin and rejoin the clients, do you mean
delete them from AD and then rejoin them?
Would it be simpler to demote the DC prior to performing the rename?
