Is this the only DC on the network? Is it also the mail server?
If the only DC you would need to bring another online temporarily, transfer 
FSMO roles, then go through the procedure below. If it's also the mail server 
then would need to do a full, verified backup, of the mailstore or bring a 
secondary online temporarily.

Gets a bit more complicated if the above scenario(s) apply.

i have the same issue
if i demote the server the SAM account will not be lost .. and what about
the users and mailboxes

as far as I know you would have to demote the DC by running dcpromo.exe,
rename the machine, then promote the machine by again running dcpromo
