Remote Exchange User

Here's my scenario:
I have a user that is on the road 50% of the time. This user wants to
connect to our Exchange server to get her emails while she's on the LAN.
Then she wants to be able to create emails offline, so they sit in the
outbox, until she connects to the internet (either the LAN or an ISP).
What would be the best way to approach this situation?
