You are correct....I simply want to change the default banner Exchange sends
when you connect via SMTP.
I know how this is accomplished for the Exch2k, 
http://support.microsoft.com/default.aspx?scid=kb;en-us;281224
but not 5.5

Why do you want to do that? As far as I know, when you receive a message the
other server needs to know what yours is saying. If you don`t generate an
initial 220 status message, the mail can`t be received, am I right?
