But my boss is using our Global Address List and it seems to default to the
Name of the Contact - I guess I need to look more in Active Directory -

Open a contact

General Tab

Under the 4 phone number boxes, directly under the e-mail address box, is
the Display as: box.

Does anyone know of a way to view the actual email address when you add a
contact to an email. 

I am trying to convert my boss from AOL to Outlook and he is complaining
that when he had AOL it always showed him the email address in the TO field
and now he can't see it - 

What do I change so he can see the email address and it will print on the
email so others have the address if they need it?
